Ingredients:
- 200g of flour
- 25g of sugar
- 1 tsp. of salt
- 1 tsp. of baking powder
- ½ tsp. of cinnamon
- 200ml of vegetable milk
- 2 large eggs
- 4 tbs of coconut oil + extra for the pan
- 140g of milled oats (2x70g)
- Optional: 2 bananas
- 150g of red fruits: strawberry, raspberries, cherries
Preparation:
- Mix in a food processor the flower, sugar, salt, cinnamon, and half of the oats
- Take a bowl and mix the eggs, plant-based milk, coconut oil and the other half of the oats. Mix with a spatula
- Add the dry ingredients to the wet ingredients (in the well). If you add the two bananas you get banana pancakes
- Fry with a little oil and make small pancakes
- Serve the pancakes with the red fruit
Tips:
- These pancakes are tasty with some fruit and a bit of plant-based yoghurt (e.g. coconut yoghurt)
