Ingredients:

  • 200g of flour
  • 25g of sugar
  • 1 tsp. of salt
  • 1 tsp. of baking powder
  • ½ tsp. of cinnamon
  • 200ml of vegetable milk
  • 2 large eggs
  • 4 tbs of coconut oil + extra for the pan
  • 140g of milled oats (2x70g)
  • Optional: 2 bananas
  • 150g of red fruits: strawberry, raspberries, cherries

Preparation:

  1. Mix in a food processor the flower, sugar, salt, cinnamon, and half of the oats
  2. Take a bowl and mix the eggs, plant-based milk, coconut oil and the other half of the oats. Mix with a spatula
  3. Add the dry ingredients to the wet ingredients (in the well). If you add the two bananas you get banana pancakes
  4. Fry with a little oil and make small pancakes
  5. Serve the pancakes with the red fruit

Tips:

  • These pancakes are tasty with some fruit and a bit of plant-based yoghurt (e.g. coconut yoghurt)
